Authentic Gullah Red Rice Recipe

The signature dish of the Lowcountry. Tomato, rice, bacon, and love in every bite. This authentic Gullah red rice recipe has been passed down for generations.

Ingredients
- 2 cups long-grain white rice
- 4 slices thick-cut bacon, chopped
- 1 large onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 2 tbsp tomato paste
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
- 2 green onions, sliced for garnish
Instructions
- Cook bacon in a large Dutch oven over medium heat until crispy, about 5 minutes. Remove bacon and set aside, leaving drippings in the pot.
- Add onion and bell pepper to the bacon drippings. Cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
- Stir in diced tomatoes, chicken broth, tomato paste, smoked paprika, salt, black pepper, and cayenne. Bring to a simmer.
- Add rice and stir to combine. Return bacon to the pot. Cover and reduce heat to low.
- Cook for 35-40 minutes until rice is tender and liquid is absorbed. Do not lift the lid while cooking.
- Remove from heat and let rest, covered, for 5 minutes. Fluff with a fork. Garnish with green onions and serve.
π‘ Pro Tip: For extra flavor, use smoked turkey instead of bacon. This dish freezes beautifully for up to 3 months.
