Gullah Limpin' Susan Recipe

The cousin of Hoppin' John — rice and black-eyed peas with tomatoes and bacon. This Limpin' Susan recipe is a Gullah Geechee weekday staple.

Ingredients
- 2 cups cooked black-eyed peas (or 1 can, drained)
- 1 cup long-grain rice
- 4 slices bacon, chopped
- 1 small onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1.5 cups chicken broth
- 1 tsp smoked paprika
- 1/2 tsp thyme
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- Hot sauce for serving
Instructions
- Cook bacon in a large skillet over medium heat until crispy. Remove bacon, leaving drippings.
- Add onion and bell pepper to drippings. Cook until softened, about 4 minutes. Add garlic and cook 1 minute.
- Add rice and stir for 2 minutes until lightly toasted.
- Add diced tomatoes, chicken broth, smoked paprika, thyme, salt, and cayenne. Bring to a boil.
- Reduce heat to low, cover, and cook 18 minutes.
- Stir in black-eyed peas and cooked bacon. Cover and cook 5 more minutes.
- Fluff with a fork. Serve with hot sauce.
💡 Pro Tip: Limpin' Susan is what you make when you want Hoppin' John but don't have time to soak beans overnight. Canned black-eyed peas work perfectly.
