Instructions

  1. Heat olive oil in a large pot over medium heat. Cook sausage until browned, about 4 minutes. Remove and set aside.
  2. Add onion and bell pepper to the pot. Cook until softened, about 5 minutes. Add garlic and cook 1 minute.
  3. Stir in okra and cook 5 minutes, stirring occasionally, until the okra starts to lose its slime.
  4. Add diced tomatoes, crushed tomatoes, chicken broth, bay leaves, thyme, smoked paprika, and cayenne. Bring to a boil.
  5. Reduce heat and simmer 25 minutes, stirring occasionally.
  6. Add shrimp, corn, and cooked sausage. Simmer 5 more minutes until shrimp is pink.
  7. Season with salt and pepper. Remove bay leaves. Serve over rice.
