Gullah Geechee Okra Soup Recipe

Ingredients
- 1 lb fresh okra, sliced into 1/2-inch rounds
- 1 lb shrimp, peeled and deveined
- 1/2 lb smoked sausage, sliced
- 1 large onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (14.5 oz) crushed tomatoes
- 4 cups chicken broth
- 1 cup corn kernels (fresh or frozen)
- 2 bay leaves
- 1 tsp thyme
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- Salt and black pepper to taste
- 2 tbsp olive oil
- Cooked rice for serving
Instructions
- Heat olive oil in a large pot over medium heat. Cook sausage until browned, about 4 minutes. Remove and set aside.
- Add onion and bell pepper to the pot. Cook until softened, about 5 minutes. Add garlic and cook 1 minute.
- Stir in okra and cook 5 minutes, stirring occasionally, until the okra starts to lose its slime.
- Add diced tomatoes, crushed tomatoes, chicken broth, bay leaves, thyme, smoked paprika, and cayenne. Bring to a boil.
- Reduce heat and simmer 25 minutes, stirring occasionally.
- Add shrimp, corn, and cooked sausage. Simmer 5 more minutes until shrimp is pink.
- Season with salt and pepper. Remove bay leaves. Serve over rice.
π‘ Pro Tip: Okra soup is even better the next day. The flavors meld overnight. Freezes perfectly for up to 3 months.
