Ingredients
- 6 cups fresh peaches, peeled and sliced (about 6-8 peaches)
- 1 cup sugar
- 1/2 cup brown sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2 tbsp cornstarch
- 1/2 cup butter
- 1 cup all-purpose flour
- 1 cup sugar
- 1 tbsp baking powder
- 1/4 tsp salt
- 1 cup milk
- 1 tsp vanilla extract
Instructions
- Preheat oven to 375Β°F. Place 1/2 cup butter in a 9x13 baking dish and put in oven to melt while preheating.
- In a large bowl, combine sliced peaches, 1 cup sugar, brown sugar, lemon juice, 1 tsp vanilla, cinnamon, nutmeg, and cornstarch. Stir gently and set aside.
- In another bowl, whisk together flour, 1 cup sugar, baking powder, and salt. Stir in milk and 1 tsp vanilla until just combined. Do not overmix.
- Remove hot baking dish from oven. Pour batter over the melted butter β do not stir.
- Spoon peach mixture evenly over the batter β do not stir. The batter will rise up around the peaches as it bakes.
- Bake 40-45 minutes until golden brown and bubbly. Let cool 15 minutes. Serve warm with vanilla ice cream.
π‘ Pro Tip: Fresh Georgia peaches are best, but frozen peaches work too. Don't overmix the batter β lumps are fine and make the cobbler more tender.
