  1. Preheat oven to 375Β°F. Place 1/2 cup butter in a 9x13 baking dish and put in oven to melt while preheating.
  2. In a large bowl, combine sliced peaches, 1 cup sugar, brown sugar, lemon juice, 1 tsp vanilla, cinnamon, nutmeg, and cornstarch. Stir gently and set aside.
  3. In another bowl, whisk together flour, 1 cup sugar, baking powder, and salt. Stir in milk and 1 tsp vanilla until just combined. Do not overmix.
  4. Remove hot baking dish from oven. Pour batter over the melted butter β€” do not stir.
  5. Spoon peach mixture evenly over the batter β€” do not stir. The batter will rise up around the peaches as it bakes.
  6. Bake 40-45 minutes until golden brown and bubbly. Let cool 15 minutes. Serve warm with vanilla ice cream.
