  1. Bring a large pot of salted water to a boil. Add shrimp and cook 2-3 minutes until pink. Drain and transfer to an ice bath to stop cooking.
  2. In a bowl, whisk together white vinegar, apple cider vinegar, olive oil, and lemon juice.
  3. Add red onion, garlic, bay leaves, mustard seeds, peppercorns, red pepper flakes, salt, and sugar. Stir to combine.
  4. Drain cooled shrimp and add to the marinade. Add dill and lemon slices. Stir gently.
  5. Transfer to a glass container with a lid. Refrigerate at least 8 hours or overnight.
  6. Serve cold as an appetizer or on a bed of lettuce. Will keep in the refrigerator for up to 5 days.
