- 2 lbs large shrimp, peeled and deveined
- 1 cup white vinegar
- 1/2 cup apple cider vinegar
- 1/2 cup olive oil
- 1/4 cup fresh lemon juice
- 1 large red onion, thinly sliced
- 4 cloves garlic, thinly sliced
- 2 bay leaves
- 1 tsp mustard seeds
- 1 tsp black peppercorns
- 1/2 tsp red pepper flakes
- 1 tsp salt
- 1/2 tsp sugar
- 1/4 cup fresh dill, chopped
- 1 lemon, thinly sliced
Instructions
- Bring a large pot of salted water to a boil. Add shrimp and cook 2-3 minutes until pink. Drain and transfer to an ice bath to stop cooking.
- In a bowl, whisk together white vinegar, apple cider vinegar, olive oil, and lemon juice.
- Add red onion, garlic, bay leaves, mustard seeds, peppercorns, red pepper flakes, salt, and sugar. Stir to combine.
- Drain cooled shrimp and add to the marinade. Add dill and lemon slices. Stir gently.
- Transfer to a glass container with a lid. Refrigerate at least 8 hours or overnight.
- Serve cold as an appetizer or on a bed of lettuce. Will keep in the refrigerator for up to 5 days.
π‘ Pro Tip: The longer these marinate, the better they get. Make them a day ahead for the best flavor. Serve with crusty bread to soak up the marinade.
